Below overview shows the upgrade process for vSphere and upgrade options for ESXi
The first upgrade will be the lab for sure. In my lab I selected the GUI and CLI methods for upgrade.
My hosts were running vSphere 7. After downloading the offline bundle I used the VMware Host Client to browse the datastore and upload the bundle.
Once the file upload completes. Connect to the ESXI host via SSH and run these command lines
## Replace text in bold with the path to your Datastore where offline bundle was uploaded.
# List the image in the depot
esxcli software sources baseimage list -d /vmfs/volumes/vesxi7-1a-esx-install-datastore/VMware-ESXi-8.0-20513097-depot.zip
# Run the installation and reboot when requested.
esxcli software vib install -d /vmfs/volumes/vesxi7-1a-esx-install-datastore/VMware-ESXi-8.0-20513097-depot.zip
After reboot completes your ESXI is updated to version ESXI 8.0.0

Upgrading using the GUI
The upgrade can be completed using the GUI. For this you need to mount the ISO in your remote console, configure the boot to boot from ISO and reboot your server.
Once the installer boots, follow the menu and select the disk where ESXI is installed. Then select Upgrade ESXi as below screenshot.
